Chicken And Bean Casserole Recipe

I haven’t blogged for a while because… well… nothing exciting or earth-shaking has happened to me.  I love the warm colors of Autumn.  I am enjoying the smell of dried leaves and my pumpkin spice candle.  My house looks different as the light, filtered through the colorful trees comes through my windows.

 I went to visit Amanda in Fairfax, VA for a few days and had a great time — we went to Libby’s baby shower.  Amanda also rehearsed with Sandy Asirvatham on Sunday.  I enjoyed seeing Amanda but found that she keeps a torrid pace…  I am old and like things slower 🙂

I had something weird happen last night… I woke up shaking with cold, but was burning up — my muscles hurt today from trying to hold still.  I feel a bit “off” today, but got up anyway… getting out of bed is very important.  Of course, I crawled back in for a nap.

I had my usual lunch; a tortilla with melted cheese and hot sauce.  I am munching on Wheat Thins and “Tribe” all natural Sweet Roasted Red Pepper Hummus — Amanda likes this and I am really learning to like it too! 

On Wednesday I made a chicken and bean dish… with a small portion vegetarian for Kayla, Brent’s girlfriend.  It was really good.  I made up the recipe. 

Chicken and Bean Casserole

  • 1 rotisserie chicken, cut up (or you could use 4 chicken breast halves)
  • 1/2 cup uncooked rice
  • 1 can of white beans
  • 1 can black beans
  • 2 14 oz. cans diced tomatoes
  • 1 tbsp cumin
  • 1 tsp cilantro
  • 2 cups or so of colby/jack cheese

Spray the bottom of an 11×7 pan.  Layer rice, chicken, rinsed beans.  Combine diced tomatoes, cumin and cilantro.  Spread tomato mixture on top.  Finish with the cheese.  Bake at 350 for 45 minutes or until the rice is cooked.  I think putting some cheese after the chicken layer, before the beans would be good too!!  Just increase the cheese.  I made it vegetarian just by omitting the chicken — add a bit of water if you make it without the chicken to combat dryness.

I am going to make myself a cup of tea and read my Bible.  I have been pretty good about my “one thing different,” not watching TV.  I just don’t feel well today and it is hard not to plop on the couch and turn on the TV!  My life is sort of boring 🙂

    Nice picture of you girls. Good sounding recipe too. Michael is the cook in our house and he does some amazing dishes. Almost like eating out most nights. We do a lot with black beans and cilantro. I am also a great fan of Tribe Hummus. We always have it in our fridge.
