Lemon Butter And Cranberry Cookies

 

 

 

 

 

I was looking for a recipe that included lemon and dried cranberries.  This recipe is a combination of several I found.  They make great Valentine’s Day cookies because of the color of the dried cranberries.

 

 Lemon Butter and Cranberry Cookies

  • ¾ cup softened butter
  • 1 cup sugar
  • 1 egg
  • 2 tablespoons light corn syrup
  • 2 tablespoons lemon juice (add lemon zest if you want a more intense flavor)
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup dried cranberries
  • ** sugar for rolling cookies 

Cream together the softened butter and sugar until light and fluffy.  Beat in egg, corn syrup and lemon juice/zest.  Stir in flour, baking soda, baking powder.  Fold in dried cranberries.  Chill in the refrigerator at least one hour (I don’t usually chill that long).

Preheat oven to 325 degrees.  Line cookie sheet with parchment paper.  Roll chilled dough into balls and roll in sugar.   

Bake 12 minutes or until lightly browned.

    SO, mine turned out super thin and didn’t fully cook through even after 15 minutes in the oven……hmmmm….but the batter is SO good that it’s worth eating them raw-ish 😉
